Food is love: Make Italian Meatballs and Spaghetti Sauce

Now for the secrets to making the best fresh homemade spaghetti sauce…
Grandma Rose – was the sweetest little Italian woman who ever lived – who always had a kind word for everyone, and who  lived by the adage: “Food is Love.”  Enjoy Grandma Rose’s Authentic Italian Spaghetti Sauce Recipe with my compliments and share it with your family and loved ones today.  Aprilanne

Grandma Rose’s Authentic Italian Tomato Sauce:

Why do Italian’s call Red Sauce – Gravy? The answer – Red Gravy contains meat, or the meat drippings from the browned sausage, meatballs and spareribs that eventually went into the sauce to be served with the pasta of choice.

Sauce as in Marinara Sauce – does not contain meat, and therefore retains the more common name of Red Sauce. Below is a “good” approximation of what goes into Authentic Italian Gravy – yet keep in mind – you can always get in touch with your “Inner Italian” and add whatever else you might like to “Make it Your Own.”

1. Place some Olive Oil ( a few Tablespoons) in the bottom of a large Pot – add a few cloves of garlic, gently brown – remove garlic cloves if desired.

2. Add 2-3 large cans of STRAINED Plum Italian Tomatoes – discard pulp (some will dice up the pulp and add it to the Sauce for a chunkier effect).

3. Add a hand-full of diced fresh basil, a pinch of salt and pepper to taste; bring to a boil, and reduce the heat to simmer to thicken. The thicker version is used on pasta, the thinner, lighter version is used when making your baked dishes such as lasagna and manicotti.

4. Add your browned meatballs, sausage, etc. to enhance flavor as desired – When meat is warmed through it’s ready to serve. Note: The longer the Gravy simmers, the thicker it will get, so be careful not to overdo the simmering process.

FUN FACT #2 – Grandma Rose would also pour the drippings from the browned meats into the Sauce for extra flavor but stopped doing this as she got on in years once the adverse effects of too much fats and oils in the diet became more well known.

5. At the end just prior to serving – toss in a pinch of fresh Oregano – if the Oregano sits too long in the simmering sauce, it will turn the flavor bitter. Serve with your favorite pasta and our Authentic Meatball Recipe from Grandma Rose.

Are oysters really an aphrodisiac? The truth may surprise you

Take feasting on oysters for instance, proposed aphrodisiac effects aside –  oysters are considered one of the most nutritionally balanced foods as they contain protein, carbohydrates and lipids.  Extremely low in calories one dozen oysters contains approximately only 110 calories!   Oysters are also full of vitamins, and possess the omega-3 fatty acids that are good for our skin, brain, and muscles.

Now lets take a look at the notion that oysters are an aphrodisiac  - and where the story originated from. As the legend goes – the love goddess Aphrodite rose out of the sea in an oyster shell, and the “guilty by association” rule kicked in for oysters, which century after century have gained by this association with Aphrodite the reputation of enhancing the feelings of sexual desire and performance of those mortals who eat them.

As far as oysters being great aphrodisiacs – apparently there is no scientific proof to substantiate such a claim.  But don’t let that prevent you from thinking what you want to think about them as research shows the psychological impact of believing that oysters are aphrodisiacs can sometimes be strong enough to produce  a greater sexual desire or performance - temporarily anyway.

To add a flavor boost with anti-aging health benefits try my “Anti-Aging Garlic Butter Sauce” Recipe below on BBQ’D oysters - and pair your BBQ’D oysters with a sparkling beverage such as champagne, beer, or sparkling water to indulge in a most sumptuous pairing with nature’s perfect food ~ oysters.  Oh, and if your in the mood for love…eating a few dozen oysters and just thinking they are aphrodisiac may just do the trick ~  Aprilanne

To make Aprialnne’s “Anti-Aging” Garlic Butter for 2 dozen BBQ’D Oysters:

First:  Mince 3 cloves  garlic – let sit 10 minutes to enhance disease fighting properties.

Second:  Melt 3 heaping tablespoons of a healthy butter-like spread (or butter if you must) to 1 1/2 – 2 tablespoons first cold pressed olive oil in the microwave for 10 sec. increments at a time or on the stove top – keep an eye on it as it will melt fast and you don’t want it to burn.

Then – Add a few cubes of frozen basil (get in frozen section at Trader Joe’s). You can also finely chopped 5 -6 fresh basil leaves too - but the frozen variety is micro-fine and blends really well into the butter/olive oil mixture.

Next:  Coarsely chop a few springs of  fresh Rosemary, or the herb of your choice and mix all ingredients together well in a small bowl.

Now - once your oysters have opened up on the grill (they have been cooking at medium heat witht the lid down for about 5 – 10 minutes depending on your grill and the temp. you have it set on) – split open and spoon enough sauce onto each oyster to cover the oyster meat and grill another few minutes until sauce gets slightly bubbly.

Then…ENJOY!  You can make this a great, light meal by adding a Ceasar salad,  a loaf of crusty whole grain or french bread for dipping in the extra sauce, and a sparkling beverage which will pair well with the oysters.

The 2nd recipe is courtesy of Sonoma County Executive Chef Graziano Perozzi who, graciously showed us how to “make meatballs” on California Living prime time – which can be viewed in the video player above for an easy step by step account of how to…make Meatballs! Keep the "Honeymoon Period" going when it comes to your health & fitness goals!

Keep the "Honeymoon Period" going when it comes to your health & fitness goals!

Beware of what in the “fitness world ” is refered to as the “Honeymoon Period” – this is the 6 week time period between New Years Day and Valentines Day. Similar to that blissful period of the Honeymoon in a marriage, in committing to a healthy lifestyle – the beginning is when there is a great deal of energy and enthusiasm.   The gyms are bustling, and we are diligently trying to eat right. So what happens? According to numerous studies - by Valentines Day, many people have fallen back into old habits, and the enthusiasm dies down.

The good news is - it only takes about *4 – 6 weeks for something to become a habit and probably less time for us to integrate something so totally that we are no longer aware of it. *Some sources indicated it can take as little as 21 days for an action to become a habit.

So how can you make your fitness commitments last beyond the “Honeymoon Period?” Below are 3 easy Guidelines for Health & Fitness Success:

1. Keep Your Expectations Real:

While it would be nice, there are no magic pills or exercises that will whip us into shape overnight.  that said we do have the CA Living:Toned -By -Tonight Workout that will make your muscles look more defined for a big night out On-Demand, and the California Living Beach Body Workout - a terrific 20 minute total Body Workout On-Demand for you to check out when time - or a lack of it is a factor in reaching your short term fitness goals.

Keep your expectations realistic – aim to loose 1-2 pounds a week. You may experience more weight loss early on – which is natural – yet the healthiest weight loss plans will not shock your body into shedding large amounts of weight in an (unhealthy) short amount of time.

The secret is balance – your fitness goals are just one part of your life – and should not consume your every waking moment – nothing should – that would be a terribly unbalanced and unhealthy way to live. Most of us have jobs, families, and many other daily commitments beyond working out. Sure there are celebrities that lose weight or “get buff” for their next film who work at it 24/7 – but unless your planning to audition to be the next “Rambo” give it a rest! Your results will come – in time! By understanding this and keeping things in perspective you will be able to work towards your goals over a longer period of time.

2. Set up a Goal and Reward System:

It is important to have goals like – “I want to be in a bikini this summer,” – or I want to run a 5K or 10K this spring.” By setting up intermittent goals along the way and rewarding yourself for reaching these goals you will keep your enthusiasm high and have mini-milestones to look forward to achieving.

For example, going 30 days without eating junk food, or going down a size in your jeans are reasons to celebrate! By setting up non-food related rewards such as a day at the spa, a shopping spree (please don’t blame it on me), or a movie night out with your friends (hold the butter & salt please!), you will feel good about your progress along the way and be less likely to throw in the proverbial towel.

3. Work in that Workout!

What happens when we say to ourselves “I’ll get to it – right after I do this…or – I’ll do it tomorrow” – the “it” usually never happens because we did not consciously plan it into our daily or weekly routine. Create a schedule that works for you – three days a week – every other day, 30 – 60 minutes everyday – Making exercise a part of your life means making it work with the rest of your life.

The beauty of exercise is you can combine it with things you love, hiking, biking, rowing, walking – I know it’s easy to say and harder to do – but seriously, try scheduling an activity you love once a week. The Best Italian Meatball Recipe Ever.

This Meatball Recipe will always steal the show

Originally featured on California Living™ with Aprilanne primetime, Grandma Rose’s Authentic Italian Meatballs Recipe is one of 2-weeks of delicious, easy recipes in The Party Girl Diet Book.  

A little background on this recipe:  Grandma Rose’s generation did not use measurements in recipes, but rather cooked with their senses, how the food looked, tasted, and even felt, adding more cheese, or spices etc., to perfect the texture, consistency, and flavor of a dish.

With this “cooking culture” in mind, the following recipe is the official recipe known as  “Grandma Rose’s Authentic Italian Meatballs,” compliments of Joe Mack, Grandma Roses’ eldest son, who recommends tasting one as soon as it’s cool enough, “because that’s when they taste the best.”

2 pounds of chopped beef, veal and pork
2-3 eggs depending on size, slightly beaten
1/2 cup plus of finely chopped onion
3 slices of white bread or 2-3 hotdog rolls, chopped finely – About 1/2 cup of skim milk or more – Very big bunch of Italian Parsley chopped fine/leaves only
1/2 cup grated Parmigiano-Reggiano
Heaping tsp salt
1/2 tsp pepper

1. Soak chopped bread in milk till it is nice and mushy

2. Add eggs, parsley, onions, cheese, salt and pepper and mix well

3. Add chopped meat and mix well using your *hands; there is no alternative

*Fun Fact # 1 -Grandma Rose would never wear nail polish when cooking for fear that it may chip into the food she was preparing..

4. When thoroughly mixed, form into meatballs by rolling in your palms. You should make 18 to 24 meatballs.

5. Place meatballs in lightly oiled, olive of course, cookie tin and bake at 350 for 30 minutes. Do not overcook. The meatballs may be browned in a frying pan; however, the baking is easier and probably healthier.

6. When cool remove meatballs from pan and scrape off any fat that has formed. Did you make more than you need or want to freeze some to enjoy at another time? Try Joe Mack’s Freezing Trick – by laying them out on a cookie sheet and covering to freeze for later use.

Crab Cippino – is a tomato based seafood stew that in addition to fresh crab, calls for an assortment of other fish – which, in line with the latest  US Dietary Guideline should be consumed at least twice a week as part of a healthy diet.

Originally crowned the ultimate “brain food,” Omega 3 Fatty Acid rich fish such as salmon, trout, and halibut to name a few offer numerous health benefits due to their Omega 3 Fatty Acid properties.

According to the Harvard School of Public Health – in addition to providing protection against heart disease and possibly stroke, higher does of omega-3 fatty acids are used to treat depression, and “new studies identifying potential benefits for a wide range of conditions including cancer, inflammatory bowel diseases and other autoimmune diseases such as lupus and rheumatoid arthritis.”

Omega-3 fats have been linked with health benefits such as lowering the risk of heart attack and may reduce irregular heart rhythms. Omega-3 fats work to prevent disease by regulating blood clotting and the contraction and relaxation of artery walls.  They also lower blood pressure and heart rates, improve blood vessel function, and at higher doses, lower triglycerides and may ease inflammation.

Since our bodies don’t produce Omega-3 fatty acids we need to rely on food sources containing them for numerous normal body functions, such as controlling blood clotting and building cell membranes in the brain.  It is however, always recommended that you seek to get your omega-3 from foods choices and not from supplementation.  Note of caution about supplementation – always, always, I repeat – ALWAYS check with your doctor or health care provider before taking a fish oil supplement.

So what foods can you find Omega 3-fats in?  Omega 3- fats are found in fish such as salmon, tuna, and trout, herring, halibut, and sardines, as well as Omega-3 eggs that have been fortified with DHA.  Omega-3 fats in the form of ALA’s (alph-linolenic acid) can also be found in flaxseeds, walnuts, and soybeans.  ALA can be found in olive oils, canola oils, and in dark green leaf vegetables such as kale, spinach and Brussels spouts, as well as in some animal fats such as grass-fed animals.

What about the health concerns regarding mercury and other environmental contaminants  found in some fish species?

According to JAMA – The Journal of the American Medical Association, “Overall, the health benefits of eating fish greatly out-weight the potential risks – especially when guidelines are used to reduce the small chance of being affected by these risks.”

When you live in a place as beautiful as California you have to take the good with the bad and BE PREPARED for natural disasters.” Aprilanne Hurley, California Living host, author, The Party Girl Diet

Sometimes it takes a major disaster like the horrific earthquake Japan recently experienced, and the subsequent Tsunami Warnings for California’s coast to remind us of our own vulnerability to natural disasters.

The message is simple: TAKE THE STEPS TODAY TO BE PREPARED! You’ll find there is a certain “peace of mind” that comes with ‘being prepared” for disasters – and you’ll feel good knowing that you have done all you can to protect yourself and your family against the threat of disasters.  Start with creating a Family Emergency Plan, and putting together or updating your Emergency Supply Kit today!

While you can start by just get the basics and add items little by little, the best thing is to dive in and make it happen in one power shop at the grocery or warehouse store to be sure you have the emergency supplies below, which are recommended by FEMA to have on hand to “Be Prepared:”

  • Three-day supply of non-perishable food.
  • Three-day supply of water – one gallon of water per person, per day.
  • Portable, battery-powered radio or television and extra batteries.
  • Flashlight and extra batteries.
  • First aid kit and manual.
  • Sanitation and hygiene items (moist towelettes and toilet paper).
  • Matches and waterproof container.
  • Whistle.
  • Extra clothing.
  • Kitchen accessories and cooking utensils, including a can opener.
  • Photocopies of credit and identification cards.
  • Cash and coins.
  • Special needs items, such as prescription medications, eye glasses, contact lens solutions, and hearing aid batteries.
  • Items for infants, such as formula, diapers, bottles, and pacifiers.
  • Other items to meet your unique family needs.

Chances are, if you have to evacuate immediate – there will be little time to gather additional items outside of your pre-packed emergency kit so set aside some warm clothing for each family member and bedding such as a sleeping bag for each that you can grab and go with if sheltering in place is not an option:

  • Jacket or coat.
  • Long pants.  (thermals, long underwear).
  • Long sleeve shirt. (think layers).
  • Sturdy shoes. (waterproof options plus extra socks)
  • Hat, mittens, and scarf.
  • Sleeping bag or warm blanket (per person).

Other considerations are to have on hand are a week’s worth of prescription medications on hand, extra cash, gas in your car, and cell phone charger.

Customize the above list and suggestions to suit your family’s specific needs to have what each family member needs to exist without aid for at least 3 days, diapers, formula, etc., for babies; and having board games and toys in your kit for your children will “keep the peace” and the sanity if you find yourself in a shelter.

San Francisco Bay Area Author Aprilanne Hurley set out on a mission to teach nutrition to the mothers and children in a transitional village on the Island of Oahu…and came home with a lesson in the power of the human spirit.

It was all smiles and giggles as some 30 Oahu village children gathered around Aprilanne to learn about healthy food choices as part of Hurley’s “Eat a Rainbow” nutrition program.  Hurley designed this 4 module course to teach at-risk parents and children about making healthy foods choices through the use of color.

“We had an amazing day of learning, food, and fun,”  Hurley offers, adding, “and while all of the children were excited and thrilled to see the many colorful foods presented, the younger children got extremely excited when they saw they were going to have orange juice.  It broke my heart.  These children, most of them previously homeless, shared a glimpse of the amazing resilience they have no matter what adversities life brings.   Their beautiful innocence, and sheer exuberance for the little things in life like orange juice and fruit – will stay with me forever.”

With Weinberg Village Waimanalo’s Director Holly Holowach’s catering expertise in the kitchen – we served over 60 village members a tasty recipe from Hurley’s Party Girl Diet book for the main course:  Cavatelli & Broccoli.  This super healthy dish was made with fresh steamed broccoli, braised dark meat chicken, chopped garlic, and curly shaped pasta to attract the Keiki’s interest.   

Holowach offers, “the families at the Village really enjoyed Aprilanne’s visit.  The mothers were so attentive during her class and appreciated learning her tips on how to create healthy bodies through eating fruits and vegetables and adding more colorful foods to their diets.  The children loved the food, especially the fruit and yogurt. “

Holowach adds, “the parents are still talking about how much they liked the Chicken Broccoli pasta dish!  Several of them have read Aprilanne’s book and were so thrilled to meet her!  Mahalo to Aprilanne for coming to the village and sharing her love of healthy eating and good nutrition with our families.”

We covered The Party Girl Diet’s Top 10 Foods for Health & Longevity, and the importance of eating breakfast, healthy fats, fruit, vegetables, and fiber.”  The health benefits of daily exercise was also emphasized.”

Hurley’s “Eat a Rainbow” Party for the Keiki (meaning children in Hawaii) started off with a colorful “pupu platter” consisting of fresh veggies and tomato salsa. The fun kicked into high gear with dessert – as Aprilanne launched a “hands-on” food project with the Keiki – who all thoroughly enjoyed learning how to make their own fresh fruit kabobs with a wide assortment of colorful fruits.  Honey and cinnamon was mixed into plain – non-fat greek style yogurt to create a healthy fruit dip for the kabobs.

“It was spectacular,” Hurley beams, and so rewarding to know that by the end of our “Eat a Rainbow” Keiki Party – the children tasted as many as 9 different colors through the assortment of fresh fruits and vegetables in the dishes we served.  It is interesting to note that it was the first time many of the children tasted some of the vegetables and fruits we presented – which are very common foods to us on the mainland.”

“I look at my nutrition work in Oahu as planting seeds for a future free of obesity,” Hurley notes.  “Even if just one mother or child takes what they have learned about healthy eating through my nutrition program to heart ~ I am one step closer to ending the fight against obesity.” Special Thank You goes out to Holly Holowach Director of Weinberg Village Waimanalo – who has been an integral part of this project.  It is because of Holly’s passion and commitment to see an end to homelessness in Hawaii that brought Aprilanne to Oahu, and the many hours of time, talents, and resources Holly has invested to see this project come to fruition for her village are appreciated beyond words…Mahalo!

Aprilanne’s Hot Shopping Tip: By cooking with ingredients that are fresh & local, and in season, you will experince foods at their peak of flavor AND you will save money because the more plentiful the product, the lower the cost to you.

Ingredients (For 6 servings)

  • 2 cups packed basil leaves
  • 1/3 cup olive oil
  • 1/4 – 1/2 cup low-salt chicken or vegetable broth to thin mixture (optional)
  • Juice of 1/2 of a fresh lemon (This helps to keep the basil from turning brown)
  • 1/2 cup finely chopped walnuts
  • 2 cloves garlic, minced or crushed
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon course sea-salt

Directions

  1. Place olive oil, basil, chopped walnuts, garlic and salt in food processor (or blender).
  2. Blend until thoroughly combined.
  3. Add Parmesan cheese and blend 5-10 seconds more.
  4. To thin the mixuture, add a little bit of chicken or vegetable broth in and mix. Consistency should be thick and smooth, not lumpy.

Aprilanne’s Hot Serving Tip: If you have stored the pesto in the fridge, just before serving, add 2 Tbsp of hot water or broth (the hot pasta water from your cooked pasta will work great).

Enjoy this fresh pesto sauce over veggies, as a healthy switch-up from red pasta sauce, and/or as a healthy marinade for your grilled fish, chicken, and meats.

Aprilanne’s Hot Cooking Tip: Make double the recipe and freeze the extra sauce in an ice-cube tray. This way, you will have extra pesto sauce on hand to whip up other delicious dishes. This recipe is great on steamed veggies, chicken, fish, and meats, and is delicious on pasta and pizza.

Vatican City 3/13/2013:  Roman Catholic Cardinals taking an oath of secrecy before entering a conclave, black smoke rising amid scores of media reporters and frenzied crowds, yes, the rituals of selecting a new Pope is steeped in all the delicious intrigue of a best selling suspense novel.  The difference is – this is real.

Behind the scenes Roman Catholic Cardinals chanted and prayed in the Vatican City conclave to the Holy Spirit for divine guidance in selecting the world’s next Pope.  Potentially very heady stuff if you are one of the world’s 1.2 billion Catholics awaiting the news on who will be the next leader of the Roman Catholic Church.  Additionally, this phenomenal, spiritually charged event received unprecedented media attention around the world regardless of religious preferences and beliefs.

According The National Catholic Reporter, on naming himself after St. Francis of Assisi after his election to the papacy, Argentine Cardinal Jorge Mario Bergoglio said that “he chose to name himself after Francis of Assisi because the 12th century saint ‘is the man of poverty, the man of peace, the man who loves and protects creation.’

Pope Francis I continues, “How I would like a Church that is poor and for the poor,” he told some 5,000 journalists gathered for an audience with the pope.

As a player in TV media I have to ask one question:  Why?  Why was world media so entranced by the recent process of selecting of the 266th Pope?

While I think the answer is complicated, it may in part be due to our instinctual desire as humans to “hope” for the best.  Let’s face it, whether you are Catholic or not, if you take a hard, cold look at what’s going on in the world, the reality is – we need spiritual guidance and assistance.  The well-spring of hope and the possibilities represented in the selection of the 266th Pope to lead the way to world peace shined so bright in this opportunity, that even the most pessimistic of souls could not outshine the presence of a higher deity at work.  The human existence is such that we are hardwired to “hope” for a better existence for ourselves, for future generations, and for peace on earth for all of mankind.

Party Girl Diet’s Flat Belly Artichoke Salsa Recipe featured on Good Day Sacramento:

Makes 5 servings
Ready in 10 -15 minutes

2 cups marinated artichoke hearts, drained and chopped (coarsely)
3 Roma or plum tomatoes, chopped
2 tbsp red onion, diced
1/4 cup black olives, diced
1 clove garlic, minced
1 tbsp small capers
2 tbsp fresh basil, chopped
Sea salt and fresh cracked black pepper to taste.

1. Mix together all of the ingredients above in a medium bowl.
2. Serve PGD’s Flat Belly Salsa at room temperature with julienned fresh, colorful peppers, baked chips, etc. It also makes a great topping for salads, pasta, and pizza. (You can also make PGD’s salsa ahead of time and chill before serving).

Party Girl Diet’s Naturally Detoxifying “Morning After Mocktail” (In the book)
This antioxidant packed elixir has been formulated to replace some of the vitamins lost through alcohol consumption while providing gentle detoxifying benefits.

1/4 cup Vitamin D and Calcium added Orange Juice
1/4 cup Cranberry Juice – no sugar added
1 fresh grapefruit – juiced (fresh is best, yet you can substitute 1/2 cup grapefruit juice)
1/2 lemon – juiced
Pinch of Cayenne pepper (optional)
Orange wheel or lime wedge for garnish (optional)

1. Fill a cocktail shaker with ice.
2. Pour all of the ingredients above into cocktail shaker and shake vigorously.
3. Serve it straight up! Strain contents of shaker into bar-ware for an fun presentation…Cheers!
