Love goddess Venus used “fish stew to lull her husband to sleep so she could cheat on him (as the story goes…)

Hi there Venus ~ you and Mars are looking quite cozy...may I join you?

Before we get to the juicy part about Venus - the Roman goddess of love, beauty, and fertility” using the fish stew - “Bouillabaisse” to lull her husband to sleep so she could cheat on him with “Mars - Roman god of war” - let’s take a quick look at the current information on the health benefits of eating a variety of cooked seafood:

According to The USDA’s 2010 Nutrition Evidence Library (NEL) “Moderate, consistent evidence shows that health benefits derived from the consumption of a variety of cooked seafood in the US in amounts recommended by the Committee outweigh the risks associated with methyl mercury (MeHg) and persistent organic pollutants (POPs) exposure, even among women who may become or who are pregnant, nursing mothers, and children ages 12 and younger. Overall, consumers can safely eat at least 12oz of a variety of cooked seafood per week, provided they pay attention to local seafood advisories and limit their intake of large, predatory fish. Women who may become or who are pregnant, nursing mothers, and children ages 12 and younger can safely consume a variety of cooked seafood in amounts recommended by this Committee, while following Federal and local advisories.”

A great fish dish that is as easy to make as it is delicious is Bouillabaisse - a seafood stew originating from the Provence region in southern France where as the story goes “ local mariners would cook the stew in cauldrons along the beach with their fresh catch of fish unsuitable for the market.  The dish typically included a combination of  rockfish, shellfish, mussels and crabs, and is flavored with olive oil, salt, pepper, fresh herbs, etc.  The ingredients for bouillabaisse change according to whatever the fresh seafood options are for the area in which it is made.”

Now while there at least a few authorities who agree the “mortal” birth place of was the Vieux-Port, of Marseille, located on the south east coast of France on the  Mediterranean - I found an entertaining little “story” from Roman Mythology on how Venus - the Roman goddess of love, beauty, and fertility” served bouillabaisse to her husband Vulcan in order to lull him to sleep while she consorted with Mars - the Roman god of war.”

Hmmm - now exactly what Venus was doing with Mars - the story does not go on to say, yet from what is being depicted in the art image above, it looks like Volcan definitely caught on to Venus’s “bouillabaisse antics.’

Although an interesting notion, I’m not suggesting you make bouillabaisse to put someone to sleep - in fact - after making this seafood stew on ‘California Living with Aprilanne’ - I thought it may be the perfect dish for someone to make if they were  looking to get married and “seal the deal!”

If you are already married, or looking to spice up things with your significant other with a cozy, stay in “date night” here’s a suggestion - (if you have children - get the sitter to take the kids out) open a bottle of your favorite red and nibble on a few red pepper slices and hummus dip while making this hearty seafood stew together.  Once all done and bubbly- serve it hot with a good Pinot Noir, a green salad, some crusty french bread  - and …perfecto - I guarantee it will be a night to remember!

Healthy Grilling: Decrease your cancer risk when cooking on the grill this season…

When it heats up outside use our healthy living guidlines when cooking on the grill!

When things starts heating up outside it’s our cue to fire up the grill and start cooking outdoors!  Now while I’m not aiming to be a total killjoy here - it is important to report that the process of cooking meat, poultry and fish on the grill has been proven to cause the formation of carcinogens known as HCAs (Heterocyclic Aromatic Aminies) and PAH’s (Polycyclic Aromatic Hydrocarbons).  We all love to BBQ, and cooking on the grill is a quick, easy, and fun way to prepare meals - so here are a few steps you can take to decrease the cancer risk when grilling:

1. Use fruit marinades such as orange, lemon, lime, etc., and anti-oxidant rich herbs and spices such as cumin, rosemary, oregano, etc., and marinating meats and poultry at least an hour before cooking to reduce carcinogenetic damage up to 90%!

2. Using fresh foods such as garlic, onions, rosemary, tomatoes, etc. that contain antioxidants to protect one’s DNA from the carcinogenic damage caused by the Heterocyclic Aromatic Amines HCA’s and Polycyclic Aromatic Hydrocarbons – PAHs formed when grilling meats, poultry, and fish.

3. Cooking in tinfoil to prevent the fat drippings and subsequent production of PAHs that are deposited back onto the food by smoke and flare-ups.

4. Using smaller cuts of meat so they take less time to cook; flipping frequently to promote faster cooking and prevent HCAs from forming.

Ultimately you are in control when it comes to the foods you eat and prepare for yourself and your family so do take a few extra moments when grilling to include some of the ideas above to protect yourself and loved ones from the carcinogens created when grilling meat, fish, and poultry.  Carcinogen byproducts are not formed by the way when grilling vegetables - so be sure to include lots of great roasted veggies such as colorful peppers, onions, tomatoes, eggplant, and zucchini and enjoy them all completely guilt free!  Enjoy - Aprilanne

How to avoid “Fad Diets” in Quest to Loose Weight & Feel Great…

It's Bikini Season - Beware the "Fad-Diet Syndrome"

It’s that time of year again when the temptation to go a “diet” can be so strong many people find themselves with all good intentions to eat right and loose weight throwing caution to the wind and going on the latest and greatest “fad diet” out there. 

Naturally your intentions to eat right, exercise, and loose weight are admirable and with adherence to the proper diet plan will ultimately deliver success.  The problem is, most “fad diets” can be disguised as “quick weight loss  miracle plans” which may unfortunately set people up for failure from the get-go because they are too rigid, promise unrealistic outcomes, and/or do not have the proven scientific research behind them to support their outrages weight loss promotion claims.   So how can one distinguish between a fad-diet and a wholesome, healthy weight loss strategy? If a diet you are considering has any or all of the following components proceed with caution:

Tell-tale Signs of a “Fad-Diet:”

1.   The diet offers inflated marketing claims of ultra-quick weight loss (more than a few pounds a week).

2.  The diet restricts certain food groups completely - “No carb” diets fall into this category which recommend you eat a diet full of health harming saturated fats in the form of eating all the full fat cheese, dairy, and animal proteins you want while eliminating heart healthy grains and legumes, and health promoting fruits and veggies.

3.  The diet requires you to consume specific foods only such as eating only grapefruits, bananas, cabbage soup, all liquids, or large quantities of fat and protein for extended periods of time for instance.

4.  The diet requires dieter to purchase specific weight loss supplements, drink powders, prepackaged foods and bars, etc. which can be an impractical  “eating lifestyle” to adhere to and/or maintain over a long period of time. 

5.  The diet does not promote exercise and claims you do not need to be physically active to loose weight on the diet.

While the above list is rather abbreviated to get the message out to avoid “fad-diets” like the plague - it does encapsulate nicely the top “diet pitfalls” to avoid when considering a diet plan to loose weight.  To complete the picture, below are the signs of a healthy diet - one that will offer you the most rewards for your efforts and the best results in your quest to loose weight and feel great this season:

Attributes of a Healthy Weight Loss Plan:

1.  The diet allows you to eat all of the food groups in moderation - without limiting your intake of food groups that are proven to enhance and longevity such as fruits and vegetables, beans and legumes, whole grains, etc.

2.  The diet plan is one that you can sustain (stay on) for long periods of time - ask yourself:  “will I be able to easily stay on this diet plan for “the rest of my life?”  If the answer is “yes” you may have found the perfect diet plan for you as long as it includes the rest of the points on this list!

3. The diet encourages the use of functional foods and healthful herbs, spices, servings of organic fruits, vegetables, nuts, lean protein sources such as chicken, eggs, and wild caught cold water fish, etc.

4.  Consumption of good fats such as monounsaturated fats  found in nuts, olives/olive oil, and fatty fish such as salmon for your omega 3’s are encouraged as part of a healthy eating plan.

5.  Exercise is promoted and required daily/weekly to keep you healthy and help you burn calories in order to loose weight.

The information in the above list has also been provided in an abbreviated fashion in order to get the message of  “healthy dieting” out there, and while loosing weight is not easy for many people the following simple, tried and true weight loss formula will help you in reaching your weight loss success goals:

ENERGY IN - (minus)  ENERGY EXPENDED = CALORIES/WEIGHT LOST OR GAINED. 

Calories/Energy consumed in the form of food - minus - Calories burned through exercise/activity equals = Calories/Weight lost or gained depending on whether a caloric deficit or surplus is created.

While it would be fantastic if everyone consumed a diet rich in nutrition and antioxidant rich fruits, vegetables, fish, lean protein and monounsaturated (good) fats - no matter what the calories consumed consist of - if a person of normal/average metabolism consistently expends more calories in energy (such as exercise) than they consume they will loose weight accordingly.

3,500 calories equals a pound of weight - when we burn 3,500 calories more than we have eaten we loose a pound. “Calories in - Calories Burned” = a successful weight loss strategy when you consume less calories than you burn or burn more calories than you consume.

Aprilanne Health Tip:  This recipe for Fresh Tomato Sauce is easy, quick, and makes a tomato sauce so incredibly tasty for spaghetti, pizza, and Italian baked dishes you will never suspect it is actually good for you!

Tomatoes are a major source of the Antioxidant Lycopene which is thought to reduce the risk of Cancer by 40 % - notably prostatem lung, and stomach cancer and increase survival.  Here’s an interesting tip - concentrated tomato sauces like the ones found on pizza and in pasta sauce have FIVE time more lycopene than fresh and canned and jarred tomato sauces have THREE times more the antioxidant value of lycopene than fresh tomatoes so there is no excuse to always have this power-food on hand any time you want or need a lycopene boost! 

Fresh Tomato Sauce 

Compliments of Graziano Ristaurante & Vodika Lounge, Petaluma, CA 

1. Cut a small X on top of 4 ripe, large, on the vine tomatoes - place in boiling water (boil for approx. 2 minutes to blanch - remove from water and pull off skin - dice.

2. Place approximately 1/4 cup of extra virgin olive in a large saute pan and saute 3 large shallots, minced.

3. Once onions are clear in color - add diced tomatoes to pan - one 8 oz. glass of white wine and approximately 8 oz. of water.

4. Add 1 bunch loosely cut fresh basil and 2 tsp. each sea salt and black pepper.

5. Simmer about 2 hours - the longer it cooks the thicker the sauce will be. 

6.  Serve over your favorite pasta and a side of our our Authentic Italian Meatballs and ENJOY!!!  Aprilanne

Will spending on experiences - not things - make YOU happier?

Depending on who you are - a new experience can be worth much more than a new object - and will also be better for your health.

Research suggests people will gain more lasting benefits from spending on  experiential purchases than from buying material objects - interesting huh.   Some may disagree pointing out that taking a ride in the country in a spankin’ new BMW will bring far more enjoyment that taking a ride in the country in an old pick-up, and that a picnic on champagne and caviar will give you more happiness than a picnic of bread and water.  In both examples, the amount of money invested in the “objects” enhanced the “experience” proportionately.  While these may “technically” be valid points - proponents of this line of thinking may be missing the basic point.

AcumulatingMoney.com explains it quite simply: “people receive more enduring pleasure and satisfaction from investing in life experiences than material possessions.”   “We don’t get bored of happy memories like we do with a material object.”

For example, taking a surfing lesson will give you much more to remember and chat up with your friends about than buying a new shirt or pair of shoes will - which can easily cost the same amount.  New experiences such as taking a cooking class, a horse back ride on the beach, or going scuba diving for instance, will provide more residual positive memories to share with others than a new car ever will.

That said, other factors do come into play when we are dealing with a person’s desire or need for material things - such as a person’s development level of thier self-worth, and where they find themselves on the Maslow’s Hierarchy of Needs Pyramid.

For instance, a person seeking “self-esteem” and “respect by others” -qualities listed on the green tier in the pyramid,  may not buy into the notion that “experiences are better to invest in than material things” since they are still trying to achieve “self-actualization.” Perhaps that new “benz” is the just the “vehicle” that will get them where they need to be (in their mind anyway).  A person without a job, or lacking the security of a safe home environment cannot be expected to lay out the ching for a “beach getaway” over investing in a new outfit for job hunting, or paying a higher rent in order to live in a safer neighborhood.

My conclusion on the concept that ” Buying Experiences, Not Possessions, Leads to Greater Happiness” is that it really depends on where a person is in their lives in order to be able to acknowledge, understand, and appreciate the simple pleasures of everyday life. On any given day we can experience the  sound of singing birds, see the beauty of the sun rise, inhale the sweetness of a rose, and feel what it’s like to be in love….all free experiences for the taking.

A  homeless person on the street may not enjoy a sunset the same way a person would enjoy the same exact sunset from their steamy hot tub sipping a cold drink.   To the person on the bottom tier of Maslow’s pyramid  - this suset may represent the closing of another day in hell on earth, with the anticipation of yet another cold, homeless night ahead to endure.  To a “self-actualized” person - this sunset could symbolize the perfect ending to another day in paradise, with the promise of more great things to come - it’s all about “perception” really.

Stress, among other factors, can take a toll on a person’s happiness, and the act of getting out and “experiencing” in itself is a great way to take one’s mind off some of those things bogging them down.  Since “money” or the lack of it is a common theme these days - spending “quality time” with nature, family, and friends may be a great way to enjoy life ~ without the guilt spending money can bring.  So maybe it’s time to take that hike you’ve been meaning to go on, enjoy that ride in the country, or spend a day at the beach…or do what ever it is that makes YOU happy - because after all is said and done one age old adage still rings true - “the best things in life are free.” Enjoy ~ Aprilanne

How lucky are we in California to have the ability to use our outdoor spaces almost all year round for dining and entertaining pleasure!

So before you reach for the traditional outdoor fare to serve your guests why not treat everyone to a unique pairing…your favorite wine & BBQ!

A simple secret to creating perfect food & wine parings  is matching similar flavors and intensities.  Try pairing rich meats and sauces with  wines with similar qualities and intensities such as bold, rich red, and pairing fresh fish and poultry dishes with lighter sauces and flavors with your favorite whites or sparkling wine varieties.

Classic pairings  you can’t go wrong with are oysters and sparking wine, Crab Cioppino with a great pinot, and a New York Strip Steak with a good Cab - like the pairing we featured while visiting the PlumpJack Winery on California Living.

The recipe below is a great dish to make for a weekend get-together or an outdoor holiday party when the weather is right for enjoying some great Outdoor Living…Cheers!  Aprilanne

AS SEEN ON California Living with Aprilanne

New York Steak with Spring Vegetable Couscous and Olive Salsa Verde:

A dish to go with Cabernet Sauvignon- Compliments of Former Exec. Chef, Kimball Jones, Carneros Inn, A PlumpJack Resort:

4 - 8 ounce New York Steaks
Kosher salt and freshly cracked black pepper

1 tablespoon tarragon
2 tablespoon parsley
¼ cup extra virgin olive oil
1 clove garlic minced
1 jalapeno roasted, skinned, seeded and diced
1 1/2 teaspoon capers, diced
1/2 anchovy, minced
1 teaspoon lemon zest
1 large green olive minced
lemon juice to taste

1 bunch asparagus, peeled and cut on a severe angle in 1 inch pieces
1 cup shelled English peas
Meyer lemon olive oil
1 cup couscous
1/4 teaspoon cayenne pepper

FIRST: Season the steaks with salt and pepper. Let sit out, covered, at room temperature. Start a medium size fire in a BBQ. Place a medium sized pot on the stove filled with water. Heavily season with salt and place over high heat.

SECOND: Chop the tarragon and parsley together and mix with the olive oil, garlic, jalapeno, capers, anchovy, lemon zest, and green olive. Add lemon juice to taste, a little at a time.

THIRD: Place the asparagus in the boiling water and cook for 1 minute. Remove from the water and drain. Toss in a bowl with meyer lemon oil and salt to taste. Add the peas to the water and cook until tender. Toss in a bowl with Meyer’s lemon oil and salt to taste. Reserve.

FOURTH: Bring 1 cup of water to a boil in a medium sauce pan. Add the couscous, stirring it in. Bring back to a boil. Turn the heat off and cover the couscous with a tight fitting lid. Let sit for 10 minutes. Remove the lid and fluff the couscous with a fork. Toss in the asparagus, peas and cayenne pepper. Season with salt and pepper and combine all of the ingredients.

NOW: Grill the steaks until medium rare (internal temperature of 120 degrees) about 10 minutes or so depending on the thickness of the steak. Let rest on a plate for 5 minutes.

THEN: Divide the couscous among 4 plates. Cut each steak in half on the diagonal. Place on top of the couscous and top with the salsa verde. Serve!

Oysters ~ nature’s perfect food…

Aphrodite ~ Goddess of Love rises out of the sea in an oyster shell...

 Did you ever wonder just where the notion that oysters are an aphrodisiac came from?  As the story goes - the love goddess Aphrodite rose out of the sea in an oyster shell, and the “guilty by association” rule kicked in for oysters, which century after century have gained by this association with Aphrodite the reputation of enhancing the feelings of sexual desire and performance of those mortals who eat them.

Now as far as oysters being great aphrodisiacs - well apparently there is no scientific proof to substantiate such a claim (sorry to be the one to tell you), but don’t let that prevent you from thinking what you want to think about them as the psychological impact of believing that oysters are aphrodisiacs can sometimes be strong enough to produce  a greater sexual desire or performance - temporarily anyway.

Proposed aphrodisiac effects aside -  Oysters are considered one of the most nutritionally well balances foods as they contain protein, carbohydrates and lipids.  Extremely low in calories one dozen oysters contains approximately ONLY 110 calories, and they are full of vitamins, and possess the omega-3 fatty acids that are good for our skin, brain, and muscles.

To add a flavor boost with anti-aging health benefits try my “Anti-Aging Garlic Butter Sauce” Recipe below on BBQ’D oysters - and pair your BBQ’D oysters with a sparkling beverage such as champagne, beer, or sparkling water to indulge in a   most sumptuous pairing with nature’s perfect food ~ oysters.  Oh, and if your in the mood for love…eating a few dozen oysters and just thinking they are aphrodisiac may just do the trick!  Aprilanne

To make Aprilanne’s “Anti-Aging” Garlic Butter for 2 dozen BBQ’D Oysters:

First:  Mince 3 cloves  garlic - let sit 10 minutes to enhance disease fighting properties.

Second:  Melt 3 heaping tablespoons of a healthy butter-like spread (or butter if you must) to 1 1/2 - 2 tablespoons first cold pressed olive oil in the microwave for 10 sec. increments at a time or on the stove top - keep an eye on it as it will melt fast and you don’t want it to burn.

Then - Add a few cubes of frozen basil (get in frozen section at Trader Joe’s). You can also finely chopped 5 -6 fresh basil leaves too - but the frozen variety is micro-fine and blends really well into the butter/olive oil mixture.

Next:  Coarsely chop a few springs of  fresh Rosemary, or the herb of your choice and mix all ingredients together well in a small bowl.

Now - once your oysters have opened up on the grill (they have been cooking at medium heat witht the lid down for about 5 - 10 minutes depending on your grill and the temp. you have it set on) - split open and spoon enough sauce onto each oyster to cover the oyster meat and grill another few minutes until sauce gets slightly bubbly.

Then…ENJOY!  You can make this a great, light meal by adding a Ceasar salad,  a loaf of crusty whole grain or french bread for dipping in the extra sauce, and a sparkling beverage which will pair well with the oysters.

Make someone you love tonight Authentic Italian Meatballs and Fresh Tomato Sauce!

Why “Meatballs?”   I began my quest for a chef to cook MEATBALLS with me on the show since I found out how “hungry” people are for real, authentic, Italian recipes by the popularity of my Grandma Rose’s MEATBALL Recipe .   And thanks to my Italian heritage - I’ve got a lifetime of great, authentic Italian recipes to share so consider MEATBALLS just the beginning of the many good things to come!

There are some things in life you just can’t live without -  like Grandma Rose’s Authentic Italian Meatballs and Spaghetti Sauce

Now while I have 2 Meatball Recipes to share with you  - the first is my Grandma Rose’s Recipe since it is recipe to make the Meatballs I grew up on…which has been handed down generation after generation.  The secret ingredient in this recipe is the hot dog roles (yes you read that right!) which are soaked in milk prior to mixing in with the meat to give these meatballs that delectable softness Grandma Rose’s Meatballs are famous for.

The 2nd recipe is courtesy of Sonoma County Chef Graziano Perozzi who, graciously showed us how to “make meatballs” on California Living Prime Time - which can be viewed in the video player above for an easy step by step account of how to…make Meatballs!

Graziano’s Meatballs, unlike Grandma Rose’s, don’t call for any bread or breadcrumbs.  Are they still soft and delicious?  Why not make both recipes and you be the judge…and if you are so inclined - drop us a note to let us know your vote on which recipe makes the better Meatball - Enjoy!   Aprilanne

California Giving Idea # 5 - Make a difference in the life of Marin’s less fortunate pets by donating pet food & toys to the Marin Humane Society
 
This is an easy and fun giving activity to get younger children involved in, and each donation will be used to fill gift bags for MHS SHARE Program  (stands for Special Human-Animal Relationships) which provides pet food, veterinary care, home visits, and emergency boarding for pets for more than 200 low-income seniors and disabled clients and their pets in times of need.

I realize it’s hard to get excited about flashlights, first aid kits, and meal replacement bars - that said - and in line with the idea behind the  song lyrics from the movie Mary Poppins:   “A Spoonful of Sugar helps the medicine go down”- I offer you an easy albeit sneaky way to incorporate “Emergency Prepardness” supplies  into your holiday offerings this year by mixing them in with the other more tantelzing goodies in your family’s holiday stockings!

Granted, one could consider sticking bows on first aid kits and bright holiday stickers on flashlights the equivalent of putting  “lipstick on a pig” - yet this simple activity towards “Being Prepared” is ultra-easy to execute as most of the “Readiness” supplies one needs can be picked up on that last minute dash to the grocery store TODAY!

Be creative -  you can also design a “last minute” gift around a loved ones hobbies,  for instance you can go with a gardening theme and mix in emergency supplies in a flower pot with gardening tools, seeds, etc, for your elderly neighbor who loves to putter in the yard - or include an emergency travel supply kit with some car cleaning gear, and cool car gadets in a bucket for that dad who is into keeping his car in mint condition…you get the picture!

The search for the “Fountain of Youth” may be over - literally!  Man’s quest for the proverbial “Fountain of Youth” can be traced as far back as the time of  Alexander Romance (could be as early as the 3rd Century and even further if you count Biblical references) when Herodotus‘ a Greek historian chronicles tales of discovering “healing waters” from a fountian located in the land of the Ethiopians.Other “fountain of youth myths” were introduced to the New World by sixteenth-century historians who “expanded” upon the Spanish Explorer Ponce de Leon’s account of discovering the “Fountain of Youth” in 1513 on what he thought was an island - which is now Florida.Present day - we have access to a plethora of health and beauty products and treatments promising to “take away the years” and halt the signs of aging.  Health food stores are brimming with supplements, specialty foods, and “potions” promising anti-aging and longevity boosting benefits to those consuming their contents.  Plastic surgery has become an acceptable option to looking younger, and research and drug companies search to create medications to help us live longer.  There are as many exercise machines and fad diets out there now as there are shapes and sizes of people trying to loose weight with them.And naturally - consumers snatch it all up with intense fervor as the promise of eternal youth and happiness is worth every hard earned dollar spent - assuming of course,  these products actually do deliver on what they promise.  Unfortunately, as we have all experienced - this is not typically the case, and all we have to show for our investments are empty promises, deflated hopes, and shattered dreams of attaining that ellusive state of “everlasting youth.”

Of course, for some, having the answers to attain good health, happiness, and enhanced longevity just may not be enough - as it is the very “thrill of the chase,” the richly rooted folklore, and the ongoing search for a literal “fountain of youth” that keeps this age old quest alive.

For these “die hards” -  perhaps a check in to see what Magician David Copperfield is up to is in order - as back in 2006 he claimed the “fountain of youth” existed within the boundaries of a few islands in the Bahamas he purchased where reportedly “the waters had magical,  life altering healing powers” breathing new life into dead leaves and “near dead” insects…hmmm.  Now while I’m always one for giving someone the “benefit of the doubt” folks - let’s keep in mind this guy made his living tricking people with his “illusionary” skills and play it safe for now by calling on the proven super powers of garlic, spinach, tomatoes, and array of other healthy foods available to us right now - no strings attached!  Enjoy ~ Aprilanne

Beware of what in the “fitness world ” is refered to as the “Honeymoon Period” - this is the 6 week time period between New Years Day and Valentines Day. Similar to that blissful period of the Honeymoon in a marriage, in committing to a healthy lifestyle - the beginning is when there is a great deal of energy and enthusiasm.   The gyms are bustling, and we are diligently trying to eat right. So what happens? According to numerous studies - by Valentines Day, many people have fallen back into old habits, and the enthusiasm dies down.

The good news is - it only takes about *4 - 6 weeks for something to become a habit and probably less time for us to integrate something so totally that we are no longer aware of it. *Some sources indicated it can take as little as 21 days for an action to become a habit.

So how can you make your fitness commitments last beyond the “Honeymoon Period?”  Below are 3 easy Guidelines for Health & Fitness Success:

1. Keep Your Expectations Real:

Keep your expectations realistic - aim to loose 1-2 pounds a week. You may experience more weight loss early on - which is natural - yet the healthiest weight loss plans will not shock your body into shedding large amounts of weight in an (unhealthy) short amount of time.

The secret is balance - your fitness goals are just one part of your life - and should not consume your every waking moment - nothing should - that would be a terribly unbalanced and unhealthy way to live. Most of us have jobs, families, and many other daily commitments beyond working out. Sure there are celebrities that lose weight or “get buff” for their next film who work at it 24/7 - but unless your planning to audition to be the next “Rambo” give it a rest! Your results will come - in time! By understanding this and keeping things in perspective you will be able to work towards your goals over a longer period of time.

2. Set up a Goal and Reward System:

It is important to have goals like - “I want to be in a bikini this summer,” - or I want to run a 5K or 10K this spring.” By setting up intermittent goals along the way and rewarding yourself for reaching these goals you will keep your enthusiasm high and have mini-milestones to look forward to achieving.

For example, going 30 days without eating junk food, or going down a size in your jeans are reasons to celebrate! By setting up non-food related rewards such as a day at the spa, a shopping spree (please don’t blame it on me), or a movie night out with your friends (hold the butter & salt please!), you will feel good about your progress along the way and be less likely to throw in the proverbial towel.

3. Work in that Workout!

What happens when we say to ourselves “I’ll get to it - right after I do this…or - I’ll do it tomorrow” - the “it” usually never happens because we did not consciously plan it into our daily or weekly routine. Create a schedule that works for you - three days a week - every other day, 30 - 60 minutes everyday - Making exercise a part of your life means making it work with the rest of your life.

The beauty of exercise is you can combine it with things you love, hiking, biking, rowing, walking - I know it’s easy to say and harder to do - but seriously, try scheduling an activity you love once a week. While the winter weather presents some challenges you can swim indoors, shoot hoops, or even play a game of tennis indoors - in Cali anyway!  You can also work with a trainer and create a kick-butt workout at your local gym and combine it with a fun spin or dance class to keep it interesting. Try adding kick boxing, yoga, or Pilate’s to your routine - you’ll challenge your mind and body in different ways and meet new people who share similar interests - a great fringe benefit!

According the the American Journal of Clinical Nutrition “women who ate an ounce of full fat cheese daily gained fewer pounds over time than those who did not eat full-fat cheese daily. ” According to this research, “whole-dairy contains conjugated linoleic acid (CLA) which may boost your metabolism.”

Many varieties of cheese offer decent amounts of bone strengthening calcium and muscle supporting protein.  I think the real trick to including cheese into your everyday diet is adhering to the adage:   “everything in moderation.”  You see, the problem is an actual serving of cheese is rather small  with a single ounce serving about an inch long and a half inch wide.  Now I ask you - have you ever just had one piece of cheese and said to yourself - okay that was my cheese allotment for the day?  Didn’t think so!  :)

To make the most of your cheese endeavors the suggestions below offer some interesting cheese tidbits to keep in mind when buying, serving, and eating cheese:

  • Make the most of your cheese serving by using a grater as shredded portions appear more substantial.
  • Lactose intolerant?  You may want to stick to firmer cheese varieties which usually have less lactose.
  • Soft, fluffy cheeses have less fat content and fewer calories than hard cheeses because they contain more water.

Did you know that in France entire courses and even entire meals revolve around cheese?  Some cheeses even taking on the role of a dessert item to be  savored with a fine glass of wine or port.

There is one beauty regiment that goes back as far as the times of Cleopatra - Ancient Queen of  Egypt - the Milk and Honey Bath, and women have been indulging themselves with milk and honey baths for centuries since.

There is something very  relaxing and therapeutic about taking a bath, and while the though of going to a spa to indulge in one is appealing, this is one “spa treatment” you can easily prepare to enjoy in the comforts of your own home!

Combine the ingredients below in a large bowl and then transfer to a decorative jar to keep in your bathroom.  You can simply scoop out a few cups of it to dissolve in a warm bath anytime you want to relax with a skin softening experience…ENJOY!

1/2 cup liquid honey
3 cups powdered milk
lavender buds (added for color and fragrance)

Why it works:  The lactic acid in the milk - which is an alpha hydroxy acid exfoliates the dead skin cells off while you soak as the  emollient properties of the honey sooth and soften the skin resulting in a wonderful 2 part skin revitalizing experience.  The lavender buds add a relaxing aroma, and you can substitute or add other fragrances such as rose or gardenia, etc.,  depending on what scent you are in the mood for.

Recipe:   Silverado Resort Executive Chef Peter Pahk’s Oregon Pink Shrimp with Organic Tequila and Lime Sauce as seen on California Living with Aprilanne:

Serves 6 as an appetizer

1 pound cooked Oregon Pink Shrimp

1 cup each of Red Beet, Yellow Beet and Cucumber “Confetti”

1 1/2 cups Tequila and Lime Sauce

1 cup chiffonade of Romaine Lettuce

6 Martini glasses

6 Sprigs each of dill and Italian Parsley

6 wedges of lime

For the Kefir Sauce

14 ounces plain kiefer or Greek Style Yogurt

2 ounces organic tequila

Juice of 2 limes (about 1 ounce)

Salt and Pepper to taste

To make the “Confetti” you will need a turning machine - simply set up the radishes, peppers, etc. into the machine and crank away!  This is one of the greatest ways you can “sneak” veggies into dishes and it’s fun and easy!!!  (Watch Video for more details)

For the Chiffonade of Romaine you will need one head of just the heart of Romaine lettuce.  Starting from the stem end,  slice as thin a ribbon of Romaine  that you can.  Reserve

To Serve, place 1 ounce of romaine at the bottom of a martini glass.  Hang a few strands of each kind of “Confetti” down the glass…

Spoon about 2 ounces of Kefir Sauce on top of the lettuce and then add about 3 ounces of the Oregon Pink Shrimp on top.. Garnish with the dill and parsley sprigs and lime wedge.  To compliment the acid and salt balance of this dish try pairing  with a sparkling beverage of your choice and ENJOY!!!

Originally crowned the ultimate “brain food,” Omega 3 Fatty Acid rich fish such as salmon, trout, and halibut to name a few offer numerous health benefits due to their Omega 3 Fatty Acid properties. 

According to the Harvard School of Public Health – in addition to providing protection against heart disease and possibly stroke, higher does of omega-3 fatty acids are used to treat depression, and “new studies identifying potential benefits for a wide range of conditions including cancer, inflammatory bowel diseases and other autoimmune disease such as lupus and rheumatoid arthritis.” 

Omega-3 fats have been linked with health benefits such as lowering the risk of heart attack and may reduce irregular heart rhythms. Omega-3 fats work to prevent disease by regulating blood clotting and the contraction and relaxation of artery walls.  They also lower blood pressure and heart rates, improve blood vessel function, and at higher doses, lower triglycerides and may ease inflammation.

Since our bodies don’t produce Omega-3 fatty acids we need to rely on food sources containing them for numerous normal body functions, such as controlling blood clotting and building cell membranes in the brain.  It is however, always recommended that you seek to get your omega-3 from foods choices and not from supplementation.  Note of caution about supplementation - always, always, I repeat - ALWAYS check with your doctor or health care provider before taking a fish oil supplement. 

So what foods can you find Omega 3-fats in?  Omega 3- fats are found in fish such as salmon, tuna, and trout, herring, halibut, and sardines, as well as Omega-3 eggs that have been fortified with DHA.  Omega-3 fats in the form of ALA’s (alph-linolenic acid) can also be found in flaxseeds, walnuts, and soybeans.  ALA can be found in olive oils, canola oils, and in dark green leaf vegetables such as kale, spinach and Brussels spouts, as well as in some animal fats such as grass-fed animals. 

What about the health concerns regarding mercury and other environmental contaminants  found in some fish species?   According to JAMA - The Journal of the American Medical Association, “Overall, the health benefits of eating fish greatly out-weight the potential risks - especially when guidelines are used to reduce the small chance of being affected by these risks.”  “For men and women not of childbearing age, it is not clear that mercury exposure from typical levels of fish intake has any adverse health effects.  In contrast, fish intake has significant benefits for reducing the risk of death from heart disease, the number one cause of death.”  Pregnant and breastfeeding women should “avoid the 4 types of fish that are higher in mercury content:  shark, swordfish, king mackerel, and golden bass.”   In light of these cons however - research shows there are a multitude of beneficial health benefits associated with Omega-3 Fatty Acid rich fish and food sources and everyone should really strive to include two servings of fatty fish a week into their diets.  So why not start today?!  Try making the Authentic San Francisco Crab Cioppino Recipe we are featuring on the link below -compliments of Sam’s Anchor Cafe in Tiburon, CA (which also includes antioxidant rich tomatoes, garlic, rosemary, and olive oil) - and you’ll discover a great tasting way to get more “fish” into your family’s diet - Enjoy!  Aprilanne

Bodega Bay Bouillabaisse (fish stew) Recipe

Bodega Bay Bouillabaisse

Compliments of:  Executive Chef Ken Schloss, Inn at the Tides, Bodega Bay, CA

What you’ll need:

1 lb. Live lobster, tail sections and claws, cleaned and cracked

1 lb. Dungeness crab, cleaned and cracked

24 each - raw shrimp, cleaned peeled and deveined

18 each - mussels, washed

1/2 cup lean smoked ham, julienne

8 medium tomatoes, seeded and diced

1 lemon, juiced

**1 Qt. Fish Stock (lobster body and shrimp shells are used in stock)

1 cup dry white wine

2 medium red bell peppers, diced

1 cup onions, diced

2 Tbs. garlic minced

2 bay leaves

1/8 tsp. saffron threads

1 tsp. salt, fresh ground pepper

3 Tbs. chopped fresh parsley

What you do:

-In a heavy stockpot or casserole, saute the onions, garlic and red bell peppers until soft.

-Add the smoked ham, tomatoes, bay leaves, saffron, salt & pepper.

-Add the stock, wine, and lemon juice and cook for ten minutes

-Add the shellfish, cover and cook for an additional 15 minutes.

-Remove from heat and add chopped parsley.

Serve immediately & ENJOY!!!

*Note: seafood may be substituted based on availability.

**Simple Fish Stock Recipe:

2 whole white fleshed fish, 1 Lb each

1/2 cup dry white wine
8 cups water
1 carrot, peeled
1 onion, peeled
1 celery stock
6 parsley stems without leaves
6 thyme sprigs or 3 rosemary sprigs
1 tsp black peppercorns
1 bay leaf

In a large stock pot, combine fish frames and heads (reserving fillets for later), wine, water, carrot, onion and celery. Cover and bring to a boil.

  1. Turn down the heat to medium, uncover, and simmer 20 minutes skimming the foam that rises to the top.

  2. When the foam stops rising, add parsley stems and thyme sprigs, peppercorns, and bay leaf. Simmer gently uncovered 20 more minutes. Take off heat. Strain in a colander pressing hard on the solids. You should end up with about 6 cups of stock.

  3. Sprinkle with freshly grated parmesan cheese, coarsely ground black pepper, and serve with  a fresh crusty baguette and a green salad with your choice of vegetables and an olive oil based dressing.  Enjoy!  Aprilanne  Get more easy, tasty, and healthy recipes @: CAInsider.com
